The present study aims to evaluate the effectiveness of a multicomponent intervention based on nudge theory to encourage the consumption of veggie-rich products (VRPs) in canteens and discourage sugar-sweetened beverage (SSB) intake in vending machines among secondary school students attending general vocational schools in Rotterdam.
This multicomponent intervention will be implemented in two settings within four secondary schools (2 VMBO and 2 HAVO/VWO). These settings include vending machines and school canteens. The intervention consists of a set of nudges specifically designed to target SSBs in vending machines and VRPs in school canteens. In the context of the school vending machines, a set of caloric information nudges will be examined with the aim to discourage the purchases of SSBs among students of the participating schools. In the context of the canteens, a set of nudges consisting of labelling and choice architecture strategies (e.g. presentation of VRPs) will be examined to encourage the purchases of VRPs.
The nudge strategies will be implemented sequentially, meaning each nudge will be implemented for 3 weeks followed by a 1-week washout period (i.e. no nudges present). The dependent variables are changes in daily sales purchases of VRPs and SSBs which are objectively measured by obtaining cash register outputs from the canteen/caterer staff members during the following periods:
Vending machines
- Phase 0: baseline sales data collection for 2 weeks
- Phase 1: 3-week caloric information nudge (absolute value) followed by 1-week wash-out
- Phase 2: 3-week caloric information nudge (relative value) followed by 1-week wash-out
- Phase 3: 3-week combination phase of both nudges (absolute and relative caloric information)
Canteens
- Phase 0: baseline sales data collection for 2 weeks
- Phase 1: 3-week 2-color labelling followed by 1-week wash-out period
- Phase 2: 3-week choice architecture followed by 1-week wash-out period
- Phase 3: 3-week combination phase of both nudges (labelling and choice architecture)
Doel van het onderzoek
1. Sales data of VRPs in the canteens will increase during phases in which the designated products are nudged.
2. Sales data of SSBs in the vending machines will decrease during phases in which the designated products are nudged.
Onderzoeksopzet
The intervention will run for approximately 3 months (14 weeks). The intervention will start on 25-3-2019 March and run until 28-6-2019
Sales records are measured at four-time points:
1. Baseline sales data (2 weeks)
2. Phase 1 nudges in both context (3 weeks) followed by a 1-week washout period
3. Phase 2 nudges in both contexts (3 weeks) followed by a 1-week washout period
4. Phase 3 nudges in the canteen context only (3 weeks)
